Dominican Republic, Spirit Mountain
We are excited to finally offer our first Direct Trade coffee from Spirit Mountain Estate in the D.R.. What does Direct Trade mean? Different roasters will claim a lot of things are "direct trade," and it has unfortunately become a loose term. However for our standards it means that we have know the farmer, and we did not use an importer to bring their coffee to the states. In fact, Chad Wallace, the owner of Spirit Mountain, has been a friend for a few years now, and ships all the coffee by air himself. Chad bought the 350 acre farm back in 2003, and since then created a ecological reserve that produces some excellent coffees. From Brix meters, Drying Beds, and Anaerobic processing, Chad has introduced new and innovative methods to improve his lots. This year, he has honed down his crop to select varietals to be more resistant against disease. Check out their website for more information on all they do for their community in Manabao.
